  1. Trim the fat and cut the chicken breast in half. Set aside.

  2. In a large mixing bowl whip egg whites until frothy. Whisk in the rest of the marinade ingredients until combined. Reserve 9 Tbsp for the Dredge. Place the chicken into same bowl and allow to marinade for at-least 1 hour.

  3. Sift together the dredge ingredients with a fine strainer. Mix well to combine with a fork.

  4. Use tongs to place the marinaded chicken into the dredge. Give it a double batter by placing back into the marinade and then back into the dredge. Place on parchment paper to rest before deep frying.

  5. Preheat the Deep Fryer to 350°F.

  6. While the fryer preheats whip together the sauce by whisking the sauce ingredients in a large bowl. Set aside.

  7. Deep fry the breaded chicken for about 7-10 minutes. Careful not to over crowd the fryer and temp the chicken, to make sure cooked through at an internal temperature of 165°F. When cooked set on a wire rack or paper towel.

  8. Bring a large wok, or sauce pan, to the stove top and to medium high heat. Place the chicken and then pour the sauce over top. Stirring occasionally. Keep on the heat until you see the sauce thicken throughout and the chicken is fully coated.

  9. Plate with rice and steamed broccoli. Enjoy!
