  1. Start with caramelizing your onions by mincing your onion. Using a small frying pan heated to medium high heat add 1 tbsp oil. Cook onions on high heat, and then once they begin to brown, put the heat on low, and cook low and slow until done.

  2. Mix all the ingredients for the special sauce together and set in the refrigerator until you are ready to build your burger.

  3. Create your 2 oz beef patties, grill on one side and spread mustard on the other side. Flip and grill the mustard side until cooked through.

  4. Toast your burger bun.

  5. Place your burgers back in the pan on medium high heat. Place 2 slices of American cheese on each burger. Put 2 tbsp of water in the pan, cover, and in 15 to 30 seconds the cheese should be melted through.

  6. Now your ready to build your burger. Bottom bun, special sauce, lettuce, tomato, pickles, 2 cheeseburgers, caramelized onion, and then the top bun.
